Poached Chicken Breast Salad

Ingredients

3 tbsp KEWPIE Mayonnaise

2 tsp Japanese soy sauce

3 tsp mirin seasoning

1½ tbsp water

3½ tsp white miso paste

1 tsp sesame oil

Black pepper, to taste

2 tbsp roasted white sesame, ground

150g chicken breast, poached and cooled in fridge

20g cucumber, sliced

20g carrot, sliced

10g radish, sliced

20g red onion, sliced

5 pieces sugar snaps, blanched

2 pieces baby corn, blanched

2 broccolini stalks, chopped and blanched

Parsley, to taste

Method

1. Mix mayo, soy sauce, mirin, water, miso paste and sesame oil in a bowl to make salad dressing. Set aside.

2. Slice chicken into thin strips.

3. Combine chicken and all vegetables on a plate, and drizzle dressing over the top.
