Sansho pepper is one of the typical Japanese spices and well known by its unique citrus aroma and spicy taste. It is available in Asian grocery stores.
Ingredients
200g chicken thigh, cut into 2½ cm pieces
3 stalks spring onion (white end only), cut to 2½ cm lengths
4 bamboo skewers, soaked in water for 1 minute
1 tbsp KEWPIE Sriracha Mayonnaise
2½ tbsp teriyaki sauce
2½ tsp white miso paste
3 tbsp oil, for cooking
Sansho pepper, to taste
Method
1. Starting with the chicken, alternately thread chicken, spring onion and chicken onto skewers, ending with the chicken.
2. Mix mayo, teriyaki sauce, miso paste in a bowl. Set aside.
3. Heat oil in a pan over medium-high heat. Cook all sides of the skewers, and baste with sauce for 8-10 minutes to infuse the flavour gradually, or until cooked through.
4. Sprinkle sansho pepper on top to serve
